Haupia - Hawaiian Coconut Pudding

Haupia is a popular traditional Hawaiian dessert made from coconut milk, cornstarch and sugar. This naturally gluten free coconut pudding is very simple and takes just 10 minutes to make and doesn't require an oven. The silky, creamy haupia tastes fantastic and have a fine consistency somewhere between pudding and panna cotta. Traditionally, the haupia are cubed and served plain. But you can also garnish them with fresh fruit or fruit sauces (I used mango here). If you are going to serve them in glasses, garnish them with some caramelised pineapples and/or toasted sesames since both are important ingredients in Hawaiian cuisine.

Chicken Marbella, inspired by Mediterranean flavours, although the dish was named after Marbella, a city in Spain, was actually created by the chefs at The Silver Palate in New York City. It is famous for its sweet, tangy, briny, garlicky flavour. Chicken pieces are nestled alongside briney olives and capers, sweet, juicy prunes and white wine, vinegar, lots of garlic, oregano, olive oil and brown sugar, then roasted until caramelised and the marinade cooked into a heavenly sauce collected at the bottom—truly one of the simple pleasures in life! Instead of brown sugar, you can also use coconut sugar, or even date syrup for the topping.

These adorable carrot-shaped flaky pastries are filled with a delectable roasted carrot hummus—they can be filled with herbed cheese or tuna cream if you ain’t into hummus and would make a fun starter or snack.
If you don’t have those cone-shaped moulds, make your own with aluminum foil and baking paper. Cut a regular baking paper into 4 rectangles. Roll up each rectangle into a funnel and secure the baking paper at the sides with a stapler. To make the funnel a little more stable, place a small ball of aluminium foil in the funnel and press the top ends of the baking paper roughly into the funnel.

Coffee and chilli-rubbed beef koftas with a simple grilled onion and herb salad, adapted slightly from Ottolenghi, are truly a Middle-Eastern feast and perfect for a bbq or party. The rich and smoky flavour of coffee add a depth of flavour and complexity to those koftas without overpowering the natural, beefy flavour. To avoid an overly bitter flavour when cooking at 240C/475F, use instant coffee instead of coffee grinds. The caffeine is going to burn off during the cooking process, similar to cooking with alcohol. As an added bonus, the acidity in coffee helps tenderise the meat. And mild cascabel chilli adds just the right amount of heat.

This cake recipe offers a little variety and a wow flavour experience that you don’t want to miss out. Schmand is German sour cream with a much higher fat content than regular sour cream. No Schmand, no problem, use crème fraîche instead. If you're feeling adventurous, swapping some homemade eggnog for the buttermilk. I have baked this cake for a few times with different ingredients and temperatures, and the first time I prepared the batter with eggnog and baked at 190C/375F for 50 minutes for a more golden topping. The cake was very tender on first day, and became slightly dry on the 2nd day, but still very good. Other times all with buttermilk and baked at 180C/350 for 45 minutes until lightly browned and it stayed very tender and soft even after 3rd day.

Bursting with warming flavours and aromas of spices like coriander, turmeric and chilli, satay is a popular street food across Southeast Asia countries. The meat (chicken, lamb, beef or pork) are marinated (preferably overnight), skewered, then grilled to perfectly charred and served with a rich peanut dipping sauce. You can use a mix of meat to make the satay. At home we even use tofu and fish. For the dipping sauce, I opt for the cashews. For this recipe you will need 18-20 skewers. If using wooden skewers, soak them in water for 20 minutes before using. For the extra crunch and kick, top with some roasted cashews and chilli rings.
